Siobak (Roasted Pork Belly). The meat men really wouldnt be meatmen without cooking MEAT, so we decided one day to do a FULL meat power dish that many people can enjoy! I said the process was "easy". I didn't say it was "fast" haha.
Never fails to give you those nice crispy cracklings EVERY TIME! Sio bak, or 烧肉 in chinese, is a dish popular with many people locally. The crispy skin of the pork, combined with the Poke the pork belly over it's skin (you can use a fork, we got ourselves a pricker). Kamu dapat membuat Siobak (Roasted Pork Belly) hanya dengan menggunakan 8 bahan dan 10 langkah saja. Berikut ini bahan dan cara untuk membuatnya, bikin Siobak (Roasted Pork Belly) yuk!
Bahan Siobak (Roasted Pork Belly)
- Siapkan 1 kg of Samcan.
- Gunakan of Bumbu Oles.
- Siapkan 1 sdm of Chinese 13 spice powder (ngohiang juga boleh).
- Gunakan 2 sdm of angciu.
- Dibutuhkan of Garam.
- Sediakan 1 sdt of merica.
- Dibutuhkan 1 sdt of gula pasir.
- Sediakan 1 siung of Bawang putih dihaluskan (tambahan kalau pakai ngohiang).
Skew the meat with skewers to keep the belly flat while roasting. Sio Bak , or Chinese Roasted Pork is a popular dish among the Chinese in Penang. The meat chosen for sio bak comes from the belly. It usually has layers of fat alternating with the meat.
Langkah-langkah memasak Siobak (Roasted Pork Belly)
- Potong bagian daging samcan sampai mendekati kulit (jangan putus).
- Balur bagian daging dengan bumbu oles.
- Tusuk2 bagian kulit (jangan terlalu dalam), balur dgn garam.
- Biarkan semalaman di kulkas tanpa penutup.
- Lap air yg kluar dr kulit, beri garam lagi, lalu panggang oven 220°C selama 1jam.
- Kalau bagian bawah sudah agak kecoklatan, panggang lagi dengan oven bagian atas saja 230°C 15min, supaya kulit merekah dan garing.
- Setelah kulit sudah matang, kluarkan dari oven. Tunggu samcan agak dingin kira2 15min, baru dipotong. Memotongnya dengan pisau yg tajam, dengan cara dibalik (kulit di bagian bawah) / dari arah daging ke kulit, supaya kulit tidak copot dari dagingnya..
- TIPS: Suhu oven bisa berbeda2 tergantung merk oven. Sesuaikan suhu dengan oven masing2 di kisaran 200-260°C.
- Ketika di panggang pastikan daging tidak dingin / sama dengan suhu ruangan, bila dingin akan memperlambat pemanggangan..
- NOTES: Disajikan pakai sambal matah enak banget👍.
